Chocolate Zucchini Cake

ingredients 

  • 2.5 cups (325 Gms) All Purpose flour 
  • 1/2 cup (50 Gms) cocoa powder (NOT dutch processed cocoa)
  • 2 tsp baking soda 
  • 1/2 tsp salt
  • 1 tsp cinnamon powder
  • 1.5 cups granulated sugar 
  • 2 eggs 
  • 1/4 cup (4 tbsp) melted butter 
  • 1/2 cup oil 
  • 1/2 tsp instant coffee 
  • 2 tsp vanilla or orange extract 
  • 680 Gms Zucchini, seeds removed and grated (Note: Do NOT drain)

instructions

  • Preheat oven to 350F
  • Grease and line a tube pan or bundt pan
  • Whisk together the dry ingredients – All Purpose Flour, cocoa powder, baking soda, salt and cinnamon powder – and set aside
  • Whisk together the wet ingredients – sugar, eggs, melted butter, oil, instant coffee and vanilla/orange extract
  • Add the grated zucchini to the wet ingredients and mix with a spatula
  • Add the dry ingredients to the wet ingredients and mix with a spatula
  • Transfer to the greased and lined tube pan or bundt pan
  • Bake at 350F for 65 mins or until done
