Chocolate Hazelnut Spread

INGREDIENTS

  • 250 gms blanched whole Hazelnuts (Refer to the Ingredient Notes below)
  • 6 tbsp neutral unflavored Oil, like Avocado Oil or Peanut Oil (divided)
  • 300 gms Sugar
  • 50 gms unsweetened Cocoa powder
  • 1/8 tsp Salt
  • 2 tsp Vanilla extract

Ingredient Notes: Blanched hazelnuts are already peeled. If you are using unpeeled hazelnuts, you can peel them after they are roasted by placing them in a towel (while still warm) and rubbing them to get the skins off.

  • ​Preheat the oven to 350F. Place the hazelnuts on a sheet pan and bake for 15 to 20 mins. If using unpeeled hazelnuts, refer to the Ingredient Notes above to peel them after baking them. Set aside to cool.
  • Once the hazelnuts have cooled, add them to a blender with 4 tbsp of the oil. Blend on high, mixing often, until the hazelnuts are pureed.
  • Add the sugar, cocoa powder, salt, vanilla extract and remaining 2 tbsp oil. Blend again, mixing often, until the sugar is fully dissolved and the mixture is smooth and glossy (like the picture below).
