Chocolate Zucchini Cake
ingredients
- 2.5 cups (325 Gms) All Purpose flour
- 1/2 cup (50 Gms) cocoa powder (NOT dutch processed cocoa)
- 2 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon powder
- 1.5 cups granulated sugar
- 2 eggs
- 1/4 cup (4 tbsp) melted butter
- 1/2 cup oil
- 1/2 tsp instant coffee
- 2 tsp vanilla or orange extract
- 680 Gms Zucchini, seeds removed and grated (Note: Do NOT drain)
instructions
- Preheat oven to 350F
- Grease and line a tube pan or bundt pan
- Whisk together the dry ingredients – All Purpose Flour, cocoa powder, baking soda, salt and cinnamon powder – and set aside
- Whisk together the wet ingredients – sugar, eggs, melted butter, oil, instant coffee and vanilla/orange extract
- Add the grated zucchini to the wet ingredients and mix with a spatula
- Add the dry ingredients to the wet ingredients and mix with a spatula
- Transfer to the greased and lined tube pan or bundt pan
- Bake at 350F for 65 mins or until done
